　　近期，网络上关于“薯片含TBHQ致癌添加剂”的说法引发广泛关注。涉事薯片品牌方回应称，产品中所使用的TBHQ含量符合国家规定。

　　那么，TBHQ是什么？它的作用是什么？它是否有致癌风险？对此，科技日报记者日前采访了重庆三峡学院食品科学与工程系主任王兆丹。

　　TBHQ是常见食品抗氧化剂

　　王兆丹说，许多人认为食品添加剂都是不健康的，其实不然。TBHQ等许多食品添加剂不仅能够延长食品保质期，还可以提升食品安全水平。

　　TBHQ的全称为特丁基对苯二酚，是一种常见的食品抗氧化剂，可以使食用中油脂的抗氧化稳定性提升3倍到5倍，能够显著延长食品保质期。

　　“厂商在生产薯片时，会加入食用油脂。在加热环节，油脂会适度氧化并与食品中的蛋白质、淀粉等成分发生一系列复杂反应，生成薯片独特的香气。”王兆丹介绍，食用油脂一旦过度氧化，便会散发难闻的气味，导致食品中的脂肪酸和维生素E等营养成分大量流失，甚至还会产生自由基、过氧化物等有害物质。因此，为有效防止食品中的油脂氧化，保障食品安全，TBHQ等抗氧化剂应运而生。

　　王兆丹进一步说，TBHQ能够阻断油脂氧化的链式反应，有效延缓油脂变质，最大程度保留食品原味和营养价值。因此，它已经被广泛应用于膨化食品、油炸食品等多种食品的制作中。

　　实际添加量远低于国标上限

　　针对网友关心的TBHQ的安全性问题，王兆丹认为，判断其是否存在健康风险，关键在于考量食用剂量。

　　根据《食品安全国家标准食品添加剂使用标准》(GB2760-2024)，TBHQ在食品中的最大使用量为0.2克/千克(以油脂中含量计)。这一使用量与国际食品法典委员会(CAC)所给出的建议一致。

　　美国食品和药物管理局、欧洲食品安全局以及联合国粮农组织和世界卫生组织设立的食品添加剂联合专家委员会均允许将TBHQ用于食品生产加工，且提出在限定剂量下，暂未发现显著健康风险。美国食品和药物管理局规定TBHQ最大添加量为食品中油脂总量的0.02%，欧洲食品安全局以及联合国粮农组织和世界卫生组织设立的食品添加剂联合专家委员会则设定每日TBHQ摄入量为0.7毫克/千克·体重。

　　“TBHQ的摄入量标准并非随意制定，而是遵循国际通用的科学原则，经过系统的毒理学评估和风险评估，并多次被国际权威机构验证，具有科学性与可靠性。”王兆丹举例道，联合国粮农组织和世界卫生组织设立的食品添加剂联合专家委员会在动物实验中确定，实验动物每天摄入72毫克/千克·体重剂量的TBHQ，未出现明显健康损害。基于这一实验结果，研究人员引入100倍的安全系数进行考量，最终确定人体对TBHQ的每日允许摄入量为0.7毫克/千克·体重。

　　以每日TBHQ0.7毫克/千克·体重摄入量为标准，一个体重60千克的普通成年人每天摄入TBHQ只要不超过42毫克就是安全的。王兆丹说，在日常生活中，食品中TBHQ的实际添加量通常远低于国家标准的上限。在正常饮食情况下，TBHQ的摄入量不会超过安全限量范围，正常摄入不会有致癌风险，公众不必对此过度担忧。
